Construction Complete - Loveland Palomino Restaurant Open for Business

Brinkman Construction has completed construction on the newest restaurant in Loveland’s Crossroads Plaza. The Palomino Mexican Restaurant, located just off I-25 at 6190 East Crossroads Boulevard, is now open for business.

Brinkman was excited to pair with local owners Richard and Brenda Lucio on what marks their third restaurant in Northern Colorado. They also own the original Palomino in Evans and Coyote’s Southwestern Grill in Greeley. The restaurant is known for its fresh ingredients and traditional, family recipes.

The new Palomino is a 6,080 SF freestanding facility that offers a dining area that seats 250, a large, wrap-around bar with five flat screen televisions, outdoor, covered patio/seating area and high-end finishes throughout. Construction began in late December of 2010 and as of last week, the restaurant is operating on their normal business hours serving take-out breakfast burritos and full lunch and dinner menus.

This expansion will allow the Lucios to start a new following of loyal customers much like what they have already created in Greeley and Evans.” said Paul Brinkman, president of Brinkman Construction.
